This article discusses the composition and health benefits of rye, with particular reference to its content of dietary fibre. Aspects considered include: structure of the rye kernel; definition of dietary fibre in Europe; content of dietary fibre and its components in rye; content and mol. wt. of dietary fibre components in milling fractions of rye; and dietary fibre in rye products.
