摘要

Fish oil is a rich source of n-3 polyunsaturated fatty acids. The ability of modified cellulose to act as a microencapsulating agent for fish oil was studied. The spray-dried microcapsules were analysed for encapsulated oil using different extraction methods. The oxidative stability of the encapsulated fish oil was examined. The microstructure of the microcapsules was investigated by optical microscopy and scanning electron microscopy. The modified cellulose was a successful coating material for fish oil microencapsulation.
