摘要

Rats were fed potato starch instead of corn starch to cause obesity and were then divided into 4 groups and fed modified potato starch for 70 days. The 4 groups were: normal potato starch group(GPS); small potato starch group (SPS); enzyme treated potato group (EZ ); and acid treated potato starch group (H40). Body wt. and feed efficiency, lipid profiles in serum, lipid peroxidation in tissues and redox antioxidant system assessed by glutathione and glutathione peroxidase in vivo were determined. There was no difference in body wt. increase between the GPS, EZ and H40 groups. GPS group and SPS group did not show significant difference in blood glucose, cholesterol level, LDL-cholesterol and total cholesterol and their measured values were lower than those of EZ and H40 groups. No significant difference was found in HDL-cholesterol level except for GPS group, which was lower. Furthermore, when the atherogenic index (AI) was calculated by HDL-cholesterol and TC contents, H40 group showed a higher value than other groups. Serum lipid peroxidation in H40 group was higher than in the other groups. Glutathione activity was lower in the SPS group.
