Trehalose (α,α-trehalose) is a non-reducing disaccharide consisting of glucose. This sugar has been produced conventionally by the method of extraction from the yeast cell, and was thus too expensive to be used in the food industry as a material for foods. Recently, however, a novel pathway for trehalose synthesis from glucan in bacteria was discovered, and established industrially to produce trehalose from starch using newly discovered bacterial enzymes.
