摘要

Gluten-free salmon lasagne and salmon pasta ready-meals containing nutraceuticals were formulated, prepared and evaluated. They received reasonable acceptability scores. The meals can be classed as functional and may point the way to a new generation of ready-meals targeted at the health market and also at segments of the population, such as the elderly.
