In this study,the detection of adulteration in beef roll was performed using a PEN3 electronic nose system.To detect differernt adulterated samples,analytical methods involving principal component analysis and linear discriminant analysis were used.The results showed that the electronic nose could stably reflect the changes in the volatile matter information in the beef rolls mixed with different proportions of pork and ducks and could separate the meat samples with different proportions.%使用PEN3系统的电子鼻对掺入不同比例的猪肉和鸭肉的牛肉卷样品进行检测辨别,用主成分分析(PCA)和线性判别分析(LDA)进行分析.结果表明:电子鼻能稳定地反映出掺入不同比例猪肋条肉、鸭肉的牛肉卷中挥发性物质信息的变化,并且能够将不同掺入比例的肉样很好地区分开.
