柠檬酸处理对花生粕中黄曲霉毒素B1脱毒效果的研究

     

摘要

In this paper,we discussed the influence of different factors,such as solid-to-liquid ratio,concentration and processing time,on the detoxification effect of citric acid on aflatoxin B1 (AFB1) in peanut meal.The results showed that:the content of aflatoxin B1 in the peanut meal decreased dramatically as the solid-to-liquid ratio and the concentration increased and as the processing time prolonged.A better dedetoxification effect could be obtained under the conditions of solid-to-liquid ratio 5 ∶ 1,concentration 80 g/L and processing time 30 minutes,and the content of AFB1 in the peanut meal could be reduced from 25.75 μg/kg to 5.0 μg/kg.%研究了柠檬酸不同处理条件(液料比、浓度、时间)对花生粕中黄曲霉毒素B1(AFB1)脱毒效果的影响.结果表明,花生粕中黄曲霉毒素B1含量在一定的范围内随液料比的增加、浓度的增大及时间的延长而显著降低.当柠檬酸溶液在液料比为5∶1、浓度为80 g/L、处理时间为30 min时具有很好的脱毒效果,可将花生粕中的毒素由25.75 μg/kg降低至5.0 μg/kg以下.
