复乳化(W/O/W)-复凝聚-喷雾干燥法制备维生素B1微胶囊的研究

         

摘要

The methods of embedding water-soluble core materials are complex and embedding rate is low.The vitamin B1 microcapsule was prepared by multiple emulsion (W/O/W)-complex coacervation-spray drying while gelatin and gum Arabic as wall materials and transglutaminase as cross-linking agent.The results showed that the appearance of vitamin B1 microcapsule was spherical,with typical depression,integrity surface,and the structure of the capsule wall had a good protective effect on the core material;Comparison of infrared spectrum of gelatin,gum Arabic,vitamin B1 and microcapsule showed that there was no new chemical bond formation,which indicating that gelatin/gum Arabic capsule was formed by electrostatic interaction;the glass transition temperature was 50.77 ℃,and the storage property was stable at room temperature of 25 ℃;the D50 range of grain diameter was 8.83 μm;the embedding rate of microcapsule products was 91.84%.It was concluded that the method of multiple emulsion (W/O/W)-complex coacervation-spray drying could be applied in the embedding of water-soluble core material.%水溶性芯材包埋的方法复杂,包埋率较低.以明胶和阿拉伯胶为壁材,谷氨酰胺转氨酶作为封端基剂,采用复乳化(W/O/W)-复凝聚-喷雾干燥法制备维生素B1微胶囊.研究结果表明:维生素B1微胶囊外观呈球形,有典型凹陷,表面完整,囊壁的结构对芯材有良好的保护作用;红外图谱显示无新的化学键形成,表明明胶、阿拉伯胶是通过静电相互作用形成胶囊;玻璃化转变温度为50.77℃,在室温25℃时贮藏性质较稳定;D50粒径是8.83 μm;微胶囊产品的包埋率为91.84%,复乳化(W/O/W)-复凝聚-喷雾干燥法能用于水溶性芯材的包埋.
