罗汉果籽油微胶囊化研究

     

摘要

The grosvenor momordica seed oil has a high content of unsaturated fatty acids and squalene. In order to avoid the oxidation and enlarge the uses of grosvenor momordica seed oil, the microencapsulation of the grosvenor momordica seed oil by spray drying method was studied. On the basis of single factor tests,the model of a second order quadratic equation was built by response surface methodology,and the effect of spray pressure,feed rate,supply air velocity, and inlet air temperature on the embedding rate of grosvenor momordica seed oil was discussed. The results showed that the optimal technological parameters of spray drying were spray pressure 0. 3 Mpa,feed rate 4. 16 mL/min,supply air velocity 733.60 L/h, inlet air temperature 189.00℃ ,the embedding rate could reach 70. 88% under optimal conditions.%罗汉果籽油中不饱和脂肪酸和角鲨烯等营养成分含量较高,为防止有效成分的氧化,扩大罗汉果籽油的用途,采用喷雾干燥法对制备罗汉果籽油微胶囊.在单因素试验基础上,采用响应曲面分析法建立了二次多元模型,探讨了喷雾压力、进料速度、进风速度和进风温度对的罗汉果籽油微胶囊包埋率的作用规律.结果表明:喷雾压力0.30 MPa,进料速度4.16 mL/min,进风速度733.60 L/h,进风温度189.00℃,在此条件下包埋率可达90.46%.
