5种市售品牌酸奶质量指标的检测

     

摘要

Objective ] The quality indicators of several kinds of commercially available brands of yogurt were detected .[ Method ] With 5 brands of yogurt as study object, the quality indicators were detected and comprehensively evaluated.The acid value, protein, reducing sugar, fat and total number of colonies were determined with the national standard method.[Result] The results showed that the measurement indicators of five brands of yogurt are in line with national standards.[Conclusion] The study can provide reference for consumers to choose commercially available brands of yogurt.%[目的]对几种市售品牌酸奶进行质量指标检测。[方法]以市场上常见的5种品牌的盒装原味酸奶为研究对象,对酸奶的质量指标进行检测对比,综合评判,酸价、蛋白质、还原糖、脂肪和菌落总数均按照国标的方法进行测定。[结果]试验表明,5种酸奶所测指标均符合国家标准,品质良好。[结论]研究可为消费者选购市售酸奶提供参考。
