Food safety is consumers' basic requirement of food which is not including appearance, taste, nutrition etc. However, recent years, the issues of domestic food emerge in an endless stream. Great food safety accident is common occurrence, which not only harms the health of consumers, but also greatly affects our people's rust degree of domestic food, and at the same time obstructs the development of social harmony and stability. How to solve the issues of food safety, and the fast, accurate detection of food have extremely significant meaning of development of Chinese food industry. This paper did the research on the fast detection technique of food safety.%食品的安全性是消费者对于食品除了外观、口感、营养等最基本的要求，但是近年来我国国内食品问题层出不穷，重大食品安全事故屡见不鲜，不但危害消费者的身体健康，而且极大程度影响国人对于我国食品的信任程度，同时阻碍社会的和谐稳定发展。如何解决食品安全问题，对食品进行快速、准确的检测对于我国食品产业的发展有着极为重要的意义。本文主要对目前食品安全快速检测技术的研究进展进行简单的介绍。
