冷冻饮品质量安全风险分析及防控措施

         

摘要

冷冻饮品行业在取得快速发展的同时,也暴露一些产品质量安全问题,其中微生物污染问题尤为突出.通过统计分析近年来冷冻饮品的食品安全抽检情况,结合冷冻饮品生产工艺特点,对产品生产、运输以及销售环节的风险分析,提出相应的产品风险防控措施,有利于冷冻饮品的政府监管,标准制修订以及企业自我防控等.%Frozen drinks industry has achieved rapid development, at the same time also exposed some quality and safety problems, especially the microbial contamination. Through the statistical analysis of food safety observation situation of frozen drinks in recent years, combined with its production process, and the risk analysis of the product production, transportation and sales, this paper puts forward the measures of risk prevention and control. It is good for the frozen drinks'government regulation, the standard system revision, and the enterprise self control and so on.
