比色法研究猪肉乳酸含量变化

         

摘要

利用冷冻离心和硫代巴比土酸(TBA)比色法检测猪肉中乳酸含量的变化.在0-72h内,猪肉中乳酸的平均含量分别从0.0594mg/g,上升到1.0962mg/g,相对标准偏差(RSD%)从4.1035%下降到0.9551%.对猪肉中添加不同的乳酸标准液进行了乳酸含量测定,结果显示,乳酸的回收率在97.28-103.45.%Lactic acid chang of pork were determined by refrigerated centrifugation and thiobarbituric acid (TBA) colorimetric method. Average content of lactic acid of pork was from 0.0594mg/g up to 1.0962mg/g during Oh to 72h. RSD% was from 4.1035% down to 0.9551%. Through the pork added different standard sample solution of lactic acid was determined, the results indicated that the recovery rate was 97.28%-103.45%.
