Potato native starch is one of the important natural polymer materials and it has been widely applied in food industry, paper manufacturing industry, textile industry, and pharmaceutical industry due to its irreplaceable characteristics. Potato modified starch, which was modified by physical, chemical or other methods, broadens the utilization of potato native starch. Due to the wide distribution and large planting area of potato in China, huge raw materials could be provided for the manufacture of potato native and modified starch.
