几种可能致癌的食品添加剂安全性探讨

         

摘要

针对近年来出现苏丹红、亚硝酸钠等一系列食品安全事件,探讨了食品添加剂的安全性。分析目前食品添加剂的使用现状和几种致癌添加剂的致癌原因,并提出了食品添加剂使用原则和建议。只有建立完整的食品添加剂安全体系和评价体系,提高现有标准,确保食品添加剂安全、无毒,并规范使用时的标准,控制摄入量,才能真正地保证食品安全。%This review mainly focuses on NaNO2 ,Sudan and a series of other food safety incidents which have occurred in recent years,and discusses the safety of food additives.Firstly,it analyzes the current utilizing situations of food additives and the cause of cancer of several carcinogenic food addi-tives.Secondly,it proposes the using principles and recommendations of food additives.Only by es-tablishing a complete security system and evaluation system for food additives,improving the existing standard,ensuring the safety and non-toxic of food additives,stipulating using standard and restric-ting intake,the safety of food could be guaranteed.
