食醋原料考证

         

摘要

Vinegar,as a kind of traditional condiment,is the necessary condiment in people's daily life. However,because of the differences in vinegar brewing regions and materials choice of the north and the south since the ancient times,the varieties and flavors of vinegar are different.In order to better understand the formation of vinegar flavor,the author researches and compares the raw materials of Jiangsu and Zhejiang rose rice vinegar,Zhenjiang aromatic vinegar,Sichuan bran vinegar,Shanxi mature vinegar and smoked vinegar,which has provided the theory and basis for the selection of raw materials in vinegar brewing process.%传统调味品的食醋是人们日常生活中必不可少的调味品。因为自古以来南北方酿醋的地域和原料的选择不同,导致南北方所酿造的醋的品种及风味各不相同。为了能更好地了解醋风味的形成,笔者研究对比了江浙玫瑰米醋、镇江香醋、四川麸醋、山西陈醋和熏醋的酿造原料,为今后食醋在酿造过程中对原料的选择等提供理论和依据。
