粮食加工副产品中可溶性膳食纤维制备的研究进展

         

摘要

粮食加工副产品中含有丰富的膳食纤维,其主要成分分为可溶性膳食纤维和不可溶性膳食纤维.利用粮食加工副产品制备可溶性膳食纤维,不仅了提高粮食资源的利用率,而且是未来食品加工研究的方向之一.综述了膳食纤维的定义及性质功能,重点总结了国内外粮食加工副产品中可溶性膳食纤维的制备方法,并对膳食纤维的制备技术的应用和发展进行了展望.%T here are plenty of resources of dietary fiber w hich are divided into soluble dietary fiber and insoluble dietary fiber in cereal processing by-products .The preparation of soluble dietary fiber from cereal processing by-products not only improves the utilization ratio of cereal resources ,but also is one of the future research directions of food processing .The definition and function of dietary fiber were summarized ,emphatically the preparation methods of soluble dietary fiber in food processing by-products in domestic and abroad ,and the application and development of soluble dietary fiber were prospected .
