Fifteen lemon-flavored soft drinks, one lemon-flavored low-alcoholic ready-to-drink beverage, and fresh lemon juice were analyzed on GCxGC. The majority of these commercial products showed very similar spot pattern, but slightly different from the fresh lemon juice, which contained much less spots corresponding to monoterpene alcohols. In contrast, unique spots were observed for some samples, but these could not be identified. Of the ready-to-drink low-alcoholic beverage, heat-challenge test was performed and analyzed by GCxGC. Decrease of limonene and linalool, while increase of deterioration compounds including p-cymen-8-ol were observed by heating. Thus it was shown that GCxGC is a powerful tool to distinguish the differences/changes of the components between samples.
