Results of comprehensive laboratory studies of microwave heating of frozen products comprising filleted fish and vegetable garnishes or thick sauces are presented. The results indicate serious problems with both cooking instructions and packaging of such products, which are understated reheating time and lack of protection against local overheats. The problems are solved using thermodynamic estimations of the cooking time and implementation of a shielding package that reflects microwaves impinged from lateral directions. The effectiveness of proposed solutions is confirmed by results of post-microwaving temperature mapping that indicates homogeneous heating.
