There has been worldwide interest in natural antioxidants from plant sources and polyphenols are the most represented. This is due to their ability to protect against oxidative stress, potentially defending against a number of diseases (Dutta et al. 2005; Kaviarasan et al. 2007; Yokozawa et al. 1998). Pulses are known to contain antioxidants (Carbonaro et al. 1996; Siddhuraju 2006), but little is known about the antioxidants present in Australian faba bean (Viciafaba) cultivars. This paper investigated the antioxidant activities of three varieties of Australia-grown faba bean.
