A major flavonol in buckwheat grains, rutin is reported to have a function in blood pressure regulation. In the germination of buckwheat for 20 h, the content of rutin was increased around two times. We can use this germinated buckwheat with 2-3 mm bud in place of normal buckwheat. After 6-10 days germination, the buckwheat sprout grows 7-10 cm with yellowish green cotyledon and rubious hypocotyls. The sprout in 6 days contains over 10 times more rutin without negative taste than in the nongerminated one. Four flavonols are produced during the germination. Recently, a rubious juice was produced from buckwheat sprouts by lactic fermentation. This sour juice possesses several medical properties.
