摘要

Current research has confirmed that food rich in antioxidants plays an essential role in the prevention of several diseases. Wine antioxidants scavenge reactive oxygen species (ROS) and inhibit human low-density lipoprotein oxidation. Wines naturally contain phenolic compounds and amino acids/peptides containing free -SH that play significant roles in wine quality, and have antioxidant activities. Moreover, sulphur dioxide and ascorbic acid -that also have antioxidant activities- are added in wines. The aim of the present work was to determine the levels of phenolics and total -SH in various white and red wines along with their antioxidant activities.
