摘要

This present report investigated the optimization of GABA-accumulation conditions in rice germ by water soaking. The optimum conditions were that soaking temperature was 40°C, soaking time 7h, pH 5.6, and the ration of rice germ/ water was 1/7 . The content of GABA in rice germ could be reached to about 489 mg/100 g from 28mg/100g. Additionally, the effects of GABA-accumulation by the different defat solvents, buffers , pyridoxal 5-phosphate (PLP), vitamin B_6 and calcium were studied. GABA -accumulation in corn germ and wheat germ were also be compared.
