摘要

The present study investigated feasibility of sweetpotato remnants as a source for commercial dietary fiber production.Ten sweetpotato varieties available in China were studied.The dietary fiber contents varied among the sweetpotato remnants,ranging from 14.3~24.6g/100g dry weight.By using the sieving method,sweetpotato variety Beijing 553 (15.1%) yielded the highest amount of dietary fiber,followed by Xu 55-2 (12.1%),Weiduoli (10.4%) and dishu 99 (10.4%).The chemical composition of the dietary fiber was measure;The pectin,hemicellulose,lignin and cellulose contents of crude dietary fibers isolated from sweetpotatoes were 8.81~22.9 g/100 g dry weight,8.60-13.3 g/100g dry weight,14.5~32.0 g/100g dry weight and 14.5~26.3g/100g dry weight,respectively.
