Tuber nutrient composition was determined for 18 commercial varieties of sweet potatoes grown in Hawaii and harvested in spring or autumn. The varieties were grouped as having orange, yellow/white or purple flesh. beta-Carotene concentrations in orange-fleshed varieties (6.7-13.1 mg/100 g) were lower than previously published results for similar varieties grown in mainland USA. alpha-Carotene was identified in 2 orange-fleshed varieties of Hawaiian origin (0.3 and 1.5 mg/100 g). The soluble fibre content constituted 25-33% of the total fibre contents. However, in 2 purple-fleshed varieties the soluble fibre content was about half of the total fibre content. Total fibre contents were calculated, using the enzymatic-gravimetric method, to range from2.01 to 3.87 g/100 g.
