PROBLEM TO BE SOLVED: To provide a mix for Chinese noodles capable of producing Chinese noodles having a good yellow color, a moist texture, excellent tension on the surface of noodles, and less stiff even when heated in a microwave oven. The present invention is a mix for Chinese noodles containing wheat flour. The mix for Chinese noodles contains 20 parts by mass or more and 75 parts by mass or less of durum flour and 20 parts by mass or more and 75 parts by mass or less of wheat flour derived from Kitahonami with respect to 100 parts by mass of wheat flour. The present invention also provides a noodle dough using the above-mentioned Chinese noodle mix as a raw material, and a method for producing Chinese noodles using the noodle dough.
