PROBLEM TO BE SOLVED: To provide a germinated green coffee bean capable of reducing the tryptophan content and improving the quality of a coffee beverage by ripening an immature fruit when the green coffee bean is germinated. SOLUTION: The sprouted coffee green beans are prepared by immersing the sprouted green coffee beans in warm water to absorb water, and then germinating and maturing the immature green coffee beans in a moist atmosphere at a predetermined temperature.
