The invention relates to a process for manufacturing cocoa or chocolate by fermentation of cocoa beans and a tank for carrying out this process. /P P This tray 1 has an open upper part 2. At least the lower part 3 of the tray 1 includes perforations 4. This tray has a volume greater than about 60 to 80 liters and is made of a material inert towards cocoa beans such as high density polyethylene or polypropylene. /P P This tank allows fermentation of the cocoa beans in better conditions of cleanliness and regularity in a particularly simple way.
