Coarse textured, instant cereal for infants - prepd by slurrying cereal flour, sterilising drying and flaking

A coarse-textured instant grain cereal, is prepd. by forming a slurry of grain cereal flour contg. 2.5-10 wt. pts. water per pt. solids and 12-30 wt. % reducing sugars based on solids, sterilising the slurry at 200-308 degrees F and =30 psig for =10 sec and drying and flaking the sterilised prod. The prod. is rapidly reconstituted on addn. of liquid and forms a coarse textured mass suitable for infant feeding. The prod. remains fully assimilatable by infants aged 6 months of 2 yrs.
