The objectives of the pilot project were: To repeat and document the batch-scalepreparation of dried sweet potato buds in industrial processing; To test a variety of packaging options with variables in terms of cost of materials, protection from light, protection from humidity, protection from microbial contamination; To analyze the provitamin A carotenoids (alpha-carotene; beta-carotene) and vitamin A content of the fresh starting material, the freshly prepared dried sweet potato buds, and the sweet potato buds stored in different packing materials for four months; To determine the acceptability and organoleptic characteristics of gruels and purees based on reconstituted sweet potato buds among young children, and mothers of young children, and; To determine the variety of culinary possibilities for low income homes that produce acceptable consumption forms.
