PURPOSE:To prepare a ''pourriture noble'' (noble rot) fruit juice with a high glycerol content, by inoculating Botrytis cinerea inot a grape juice contaning a cyclic-3',5'- adenylic acid, and cultivating the resultant mixture. CONSTITUTION:Cyclic-3',5'-adenylic acid or a derivative thereof is added to a grape juice. A free form, alkaline salt, alkaline earth metallic salt or allylic ester derivative may be cited as the cylic-3',5-adenylic acid. A mycelium of Botrytis cinerea or a cultivated mycelium thereof is then inoculated into the mixture and cultivated to give the aimed wine.
