PURPOSE: To obtain flexible YUBA (a kind of soy milk skin) which can be bent without cracking, even when it is dried, by allowing YUBA to include a polyhydrfc alcohol. ;CONSTITUTION: YUBA is allowed to include a polyhydric alcohol in an amount of 5-75 pts.wt. per 100 pts.wt. of YUBA in solid basis. The moisturizing components including water are added to YUBA in a certain proportion and YUBA is kept flexible and bendable at room temperature for 4-6 months without damage to its intrinsic taste and flavors.;COPYRIGHT: (C)1996,JPO
