PURPOSE: To obtain flexible YUBA (a kind of soy milk skin) which can be bent without cracking, even when it is dried, by allowing YUBA to include a polyhydrfc alcohol. ;CONSTITUTION: YUBA is allowed to include a polyhydric alcohol in an amount of 5-75 pts.wt. per 100 pts.wt. of YUBA in solid basis.
