PURPOSE: An enrichment method automatically adds glucose and ammonium in an adequate amount to an yeast culture in a waste spirit to increase the yeast concentration of the culture, thereby increasing the productivity. CONSTITUTION: The method comprises the steps of: inoculating(104) a yeast culture in a smaller fermenter or a conical flask containing a waste spirit previously filtered(102) and sterilized(103); culturing(105) the yeast at an adequate temperature and pH; and adding(104) a glucose solution with an automatic glucose addition system(201) at the time when the carbon source among the waste spirit is sufficiently used with vigorous yeast activity maintained during the culture. The automatic glucose addition system(201) uses an on-line measurement system comprising a dissolved oxygen measurer(202), an analog/digital converter(203) and a computer(204). A pH controller(208) adds hydrochloric acid(209) to the yeast culture to lower the pH value of the culture prior to addition of the glucose, and ammonium oxide(210) as an alkaline agent to increase the pH value after adding the glucose, thereby supplying both carbon and nitrogen sources to the yeast culture for continuous growth of yeast.
