SCAVENGER OF NITROUS ACID-BASED COMPOUND HAVING CHITOSAN AS ACTIVE CONSTITUENT

PPROBLEM TO BE SOLVED: To provide a method for suppressing production of mutagens through catching taken nitrous acid or its salt before nitrate salt widely contained in food is reduced and produces mutagens at the time of intake and on the other hand, nitrite salt to be added as a food additive produces mutagens. PSOLUTION: Catching food or feed having chitosan as the active constituent, of at least one kind of a nitrous acid-based compound selected from the group consisting of nitrous acid, nitrite salt, nitoroso chloride, nitrosamine and diazoquinone is provided. A scavenger having chitosan as the active constituent, at least one kind of a nitrous acid-based compound selected from the group consisting of nitrous acid and its salt is provided. A method for decomposing at least one kind of a nitrous acid-based compound selected from the group consisting of nitrous acid and nitrite salt in the stomach comprises orally giving chitosan to mammal is also provided.
