The invention relates to a method for obtaining stabilised natural polyphenols from plant raw materials which are rich in such compounds. Said method is characterised by the successive implementation of two steps, that is an extraction step carried out in an acidified or aqueous hydroalcoholic medium at a pH of between 1.5 and 5, preferably 3.5, by the addition of organic acid, and a purification step carried out on a chromatographic column in an acid medium, for purifying the acid polyphenol solution thus obtained.
