PROBLEM TO BE SOLVED: To provide a modified whale meat in which the occurrence of deterioration with time of an apparent tone such as color and gloss, deterioration of taste and generation of unpleasant smell of a raw whale meat are reduced in refrigeration preservation.;SOLUTION: The modified whale meat is obtained by bringing clean plate-shaped whale meat into contact with a modifying treating agent containing hyaluronic acid in an amount of 0.03-0.08 wt.% based on the whale meat as an active ingredient. The modified whale meat can be obtained by the production method including a step for converting the whale meat formed into the plate shape into a clean low-temperature whale meat free from a drip component by holding the whale meat formed into the plate shape in a saturated humidity environment at 1-5°C, a modifying and treating step for bringing the low-temperature whale meat into contact with the modifying and treating agent containing the hyaluronic acid in the amount of 0.03-0.08 wt.% based on the whale meat, preferably 0.04-0.06 wt.%, and a step for refrigerating and preserving the modified and treated low-temperature whale meat in the saturated humidity environment at 1-5°C.;COPYRIGHT: (C)2009,JPO&INPIT
