A method for preparing an extract of a soft persimmon, an extract of a soft persimmon prepared by the method, and a persimmon beverage containing the extract are provided to obtain a persimmon beverage free from constipation and blood pressure problem. A method for preparing an extract of a soft persimmon comprises the steps of removing the stem and seed of a persimmon; cutting the persimmon; adding 1-10 times of purified water to it by weight; heating it with stirring at 80-100 deg.C; cooling it to a temperature of 50 deg.C or less; adding 0.01-0.5 wt% of a cellulose breakdown enzyme and 0.01-0.5 wt% of a pectin breakdown enzyme to the cooled one and reacting it at 40-70 deg.C for 1-10 hours; heating the obtained one at 80-100 deg.C to terminate the reaction; filtering it to obtain a transparent extract; and concentrating the extract.
