PROBLEM TO BE SOLVED: To develop Bacillus natto made to be difficult to consume soybean oligosaccharide, and to provide high soybean oligosaccharide-containing fermented soybeans excellent in a healthy function, by fermenting soybeans with the Bacillus natto.;SOLUTION: This levansucrase activity-defective Bacillus natto is developed by subjecting a levansucrase gene of the Bacillus natto to gene manipulation or mutational treatment so as to make the gene defective. The soybean oligosaccharide inherently contained in the soybeans is made to be difficult to decrease during fermentation, by fermenting the soybeans with the developed Bacillus natto to produce the fermented soybeans, and therefore the fermented soybeans which contain the soybean oligosaccharide in a high concentration and are excellent in the healthy function are produced. Further, the high soybean oligosaccharide-containing fermented soybeans which contain the soybean oligosaccharide in an optional concentration are provided, by adding a soybean saccharide-containing material to the soybeans according to necessity, when the soybeans are fermented with the Bacillus natto.;COPYRIGHT: (C)2005,JPO&NCIPI
