PROBLEM TO BE SOLVED: To provide a tofu-containing retort food which includes a tofu which is soft and has a favorable texture, and maintains the shape of a natural tofu until eating it.;SOLUTION: The method of manufacturing a tofu-containing retort food includes: (1) a liquid sauce filling step of filling a liquid sauce of a viscosity 200-5,000 cps in a container; (2) a soybean milk sauce filling step of filling a soybean milk sauce including a soybean milk of a viscosity 200-3,000 cps and a coagulant in the container, wherein when the viscosity of the liquid sauce is less than 500 cps, the viscosity of the soybean milk sauce is at least 1,000 cps, and when the viscosity of the soybean milk sauce is less than 500 cps, the viscosity of the liquid sauce is at least 1,000 cps; and (3) a retort sterilization step of retort-sterilizing the liquid sauce and the soybean milk sauce and coagulating the soybean sauce to make the tofu. In addition, a tofu-containing retort food which includes the liquid sauce having a viscosity at least 800 cps at 20 °C and a tofu coagulated by the retort sterilization is disclosed.;COPYRIGHT: (C)2012,JPO&INPIT
