The goat's milk cheese with Iberian ham is made by pasteurizing the goat's milk, adding, in the curdling process, the Iberian ham that, previously, has been chopped into small pieces to facilitate mixing. # Subsequently the mass obtained in molds is introduced and, they, are arranged horizontally in a press, where they are subjected to a pressing, to remove the serum. # Once this process is finished, they are introduced into a saline solution one for a time according to the weight of the pieces obtained and, subsequently, they pass to the maturation chamber, where they undergo weekly checks. Finally they pass to the tuning chamber, until they are sold.
