PURPOSE: Dough and stock containing cudrania tricuspidata, and a producing method of knife-cut noodles using thereof are provided to offer the prevention and treatment effect on adult diseases to users. CONSTITUTION: A producing method of knife-cut noodles comprises the following steps: mixing 10kg of flour, 20-50g of cudrania tricuspidata leaf powder, 150-200g of eggs, and 20-40g of salt to obtain a dough mixture; adding kneading water obtained by extracting roots or stems of cudrania tricuspidata to the dough mixture for kneading; molding noodles from the obtained dough into the thickness of 0.5-1.5mm and the width of 3-6mm; and aging the noodles for 6-10 hours, and boiling the aged noodle strips with stock. The dough mixture additionally contains 20-40g of salicornia herbacea powder, and 10-30g of dandelion root powder. The stock is obtained by adding seasonings to a cudrania tricuspidata extract, boiling the mixture for 4-5 hours, and infusing the mixture for 2-3 hours at 70-80 deg C.
