The barbecue comprises a vertical heating means (3), termed "reference plane" (P), and food-immobilizing means consisting of: a block (15) mounted so as to be able to slide in a plane perpendicular to the reference plane (P); a yoke (20) mounted on said block (15) so as to be able to rotate about a vertical axis and comprising receiving means for a food holder (32), such that the food holder (32) can be moved away from and towards said heating means (3) and oriented parallel or perpendicularly to said means.
