PURPOSE: Salt-dried croaker using boehmeria nivea leaves, and a producing method thereof are provided to dip croaker into boehmeria nivea water after salting for preventing the generation of bad smell. CONSTITUTION: A producing method of salt-dried croaker using boehmeria nivea leaves comprises the following steps: roasting the boehmeria nivea leaves at 300 deg C for 3-5 minutes before rolling and drying; crushing the dried boehmeria nivea leaves into 200 meshes; finely cutting the roots and the skins of boehmeria nivea; mixing the boehmeria nivea roots, the boehmeria nivea skins, boehmeria nivea flowers, and water, and stirring the mixture in a thermostatic water bath at 80 deg C for 20-30 minutes to obtain boehmeria nivea water(100); concentrating the boehmeria nivea water; washing fresh croaker; mixing bay salt with the boehmeria nivea leaf powder to obtain boehmeria nivea leaf sa salting the croaker with the boehmeria nivea leaf salt for 8-10 hours; bounding the croaker with rice straws, and washing to remove the sa dipping the croaker into the concentrated boehmeria nivea water for 10-15 minutes; and drying the croaker for 1-2 days in the shade with the sea wind(200).
