摘要

Spray drying and freeze drying were employed in the dehydration of tobacco Proleaf 100. The protein products obtained by both techniques were compared for physical and functional properties. Spray drying was found to yield proteins with superior physical characteristics which directly affected the functional properties. However, pH manipulation of protein suspension-solution prior to drying resulted in protein products from both drying methods with similar functional properties.
