PURPOSE: A method for producing makkoli (Korean rice wine) by extra-high voltage processing is provided to increase the content of reducing sugar under a condition that dominant species changes into yeast and fermentation bacteria due to lactic acid bacteria damage. CONSTITUTION: A method for producing makkoli by extra-high voltage processing comprises the steps of: performing extra-high voltage processing of makkoli 60-120 hours after fermentation; and fermenting the makkoli for 30-60 hours and performing secondary extra-high voltage processing at 100-250 MPa for 2-10 minutes.
