Anthocyanin wafers with antioxidant properties

摘要

The invention relates to a wafer containing 0.2 to 25 g anthocyanins / kg of flour. Wafers have antioxidant properties 4 30 % as measured by DPPH method of free radical scavenging. The colouring is dependent on the amount of pH-regulating components and intensity of the color depends on the amount of added anthocyanins.
