The present invention relates to a preparation method for cookies using Tah Tasai Chinese cabbage baby leaves, and by considering quality characteristics of cookies and enzymatic treating the Tah Tasai Chinese cabbage baby leaves, availability of the Tah Tasai Chinese cabbage baby leaves in the body is enhanced, hardness of cookies becomes lower thereby improving texture and a clear green color of the Tah Tasai Chinese cabbage baby leaves is shown while preventing darkening of the color of the cookies as a content of the Tah Tasai Chinese cabbage baby leaves increases. In addition, industrial commercialization of vegetables that are conventionally used is enabled thereby being helpful for related industry to create additional benefits and for activating consumption of vegetables having weak storability, and to obtain health-promoting effects for people.
