PROBLEM TO BE SOLVED: To provide a meat softening agent for improving texture of food using meat of natural taste, in more details, softening meat, without using a food additive and requiring an initial investment, a meat softening method using the same, and meat with texture softened by the method.;SOLUTION: A meat softening agent comprising a saccharide composition is such that the saccharide composition contains 35 mass% or more of maltotriose, based on the total amount of solid content. A meat softening method includes adding 0.5 pt.mass or more of the meat softening agent as the solid content, based on 100 pts.mass of meat followed by heating.
