PROBLEM TO BE SOLVED: To provide a minced meat texture improving agent of natural taste, without using a food additive and requiring an initial investment, a minced meat texture improving method using the same, and minced meat with texture improved by the method.;SOLUTION: A minced meat texture improving agent comprising a saccharide composition is such that the saccharide composition contains 35 mass% or more of maltotriose, based on the total amount of solid content. A minced meat texture improving method includes adding 0.5 pt.mass or more of the minced meat texture improving agent as the solid content, based on 100 pts.mass of the raw material followed by heating.
