The present invention relates to a method for manufacturing a garlic extract having increased cycloalliin content comprising a step for enzymatically degrading the garlic extract or to a method for increasing the content of cycloalliin in the garlic extract. According to the present invention, the content of cycloalliin in the garlic extract can be increased in the case of enzymatically degrading the garlic extract or fermenting the garlic extract with lactobacillus. Especially, in the case of fermenting the garlic extract with lactobacillus before the step of enzymatic degradation, the content of cycloalliin in the garlic extract can be further increased. Additionally, the garlic extract can be effective in manufacturing health functional food if the extract is used as an additive for health functional food.
